When it comes to vegetarian or vegan dishes, eggplant rolls are one of the most delicious options. After baking them for a very short time, they manage to retain their crunches on the outside and remain solid on the inside. In addition, if you don’t particularly like tofu, eggplant serves as a great meat substitute.

The great advantage of eggplant is that  it creates a soft foundation that is very easy to digest in the stomach and works with many ingredients and spices. So you can make the variations you want and choose which flavors you want to emphasize.

Given that eggplant is a rich vegetable, you can already get a sufficient amount of a meal for many people from just a few eggplants. Depending on the spices you add, you can make them taste reminiscent of your favorite meat.

The following eggplant dice recipe has very aromatic spices, but it has a mild taste. In general, when it comes to making meatballs and burgers, soy sauce and cumin are ingredients that help a great deal in imitating the taste of meat.

Eggplant-spinach rolls

Ingredients

  • 3 tablespoons breadcrumbs
  • 1 medium-sized egg
  • 1 chopped parsley branch
  • 3 fresh cloves of garlic
  • 3 large eggplants
  • A handful of spinach
  • Spices: salt and pepper
  • If you want, you can also add oregano

Manufacturing

  1. Preheat the oven to 200 degrees.
  2. Peel and dice the garlic finely.
  3. Cut the aubergines into small cubes. Then divide them into portions and crush in a blender. You should make eggplant paste from them.
  4. Heat the pan over medium heat and add a little olive oil.
  5. Chop the onion separately into a fine (as small a chop as you just can) and sauté. Once the onion has become transparent, add a little pepper and garlic.
  6. When the garlic is browned, add the spinach and eggplant paste  .
  7. Season with salt and allow to cool for about 10 minutes, stirring constantly.
  8. After 10 minutes, remove the pan from the heat and allow to cool to room temperature.
  9. Break the egg and beat it together with the parsley. Then mix it with the eggplant paste using an electric mixer.
  10. Take a small amount of the mixture and form a ball with your hands. Roll it in breadcrumbs before putting it in the baking dish. 
  11. It takes about 20 minutes to rotate them .
  12. Once you have prepared the desired number of eggplant dumplings, place them in the oven for about 10-15 minutes. You can also fry them in a pan; However you want.

Eggplant rolls with tomato sauce

Ingredients

  • Fresh parsley
  • Olive oil
  • 1 clove of garlic
  • Fresh basil
  • 2 tablespoons sugar
  • 4-5 eggplants
  • 1 medium-sized egg
  • 150 g of hardened bread
  • Spices: salt, pepper, cumin
  • 800 g peeled whole tomatoes
  • If you wish, you can also add 125 ml of water

Manufacturing

  1. First, heat the pan over medium heat and add a little olive oil.
  2. Peel a clove of garlic. Then chop it into small (as small as possible). Do the same with the parsley and set aside.
  3. Chop the bread into small pieces and quickly soak the bread pieces in water (to soften them).
  4. Chop the eggplants (with their peel) into small cubes and saute them in a pan. Once they are heard, put the aubergines in a blender with bread, garlic, parsley and a drop of  olive oil and add a little water. Then stir until they form a paste.
  5. If the paste is good in composition, put it in a bowl. Otherwise, add water to the mixture and mix again.
  6. The eggplant paste should stand at room temperature for about 20 minutes covered with a cloth.

Roasting

  1. Preheat the oven to 200 degrees at that time.
  2. Break the egg and beat it by hand with salt and pepper. Then add the mixture to the eggplant paste and mix everything together again.
  3. Make small balls of paste. Keep in mind that the bigger and thicker the buns, the longer they will take to bake. To prevent them from sticking to the pan, it is important to lubricate it before placing the eggplant dumplings.
  4. Bake at  180 degrees for 20 minutes.
  5. Pour the entire contents of the tomato jar (with juice) into a blender with salt and pepper. Stir until it turns into a sauce. Finally, add the basil and set aside.
  6. Once the meatballs are fried, cover them with plenty of tomato sauce.

Eggplant rolls are also great if mozzarella is put inside. If you love cheeses, this option is sure to interest you.

If, on the other hand, you want to give the eggplant paste more texture as it is, you can add a little quinoa to it, which becomes crispy and delicious when fried!
